Bob Miller's Famous Pumpkin Pie Recipe

FAMOUS PUMPKIN PIE RECIEPE
 
1 ½ cups sugar
1 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
½  tsp ground cloves
4 large eggs
1 can (29 oz) pumpkin
2 cans (12 fl. Oz. each) evaporated milk
 Makes 2 x 9 inch (4-cup volume) deep-dish pie shells
 
1.       Preheat oven to 425 degrees F.
2.       Mix sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs in large bowl.  Stir in pumpkin and sugar-spice mixture. Gradually  stir in evaporated milk. Pour into pie shells.
3.       BAKE in preheated 425 degrees F oven for 15 minutes.  
Reduce temperature to 350 degrees F ; bake for 40-50 minutes or when the knife inserted near the center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
 
Pie tins will be distributed to swimmers who are baking pumpkin pies. Find a simple recipe for pie crust.
Please bring pies to the Sunday morning event and display with pumpkins on tables at poolside.
