Vitamin A - a nutrient essential for healthy hair, skin, eyes, bones and mucous membranes. It also helps prevent infections in the body.
In order for the body to convert vitamin A, to beta carotene (an antioxidant the helps prevent cancer) the body needs a little fat. Adding little bit of butter or margarine to cooked carrots will help the body make use of the nutrient.
